How to make staying Indoors more Bearable

My mom has leukemia and vascular dementia. She is 86 years old and gets cold more often. We keep the home temperature at 70 degrees but she gets a bit chilled at times. One of her favorite things is a heated throw. This was a Christmas present from my brother last year. He found it on Amazon. She enjoys wrapping in this on cold mornings when she first gets up.

Warm Fuzzy Socks

I cannot say enough about warm fuzzy socks for winter months. I recommended them for mom and she is hooked. I have always loved them for as long as I can remember. I bought my husband a few pairs last year for Christmas and he likes them as well. You can find these anywhere. I got a great deal at Old Navy when they offered them for only one dollar each. There is nothing like tossing them in the dryer for a few minutes to get them even more comforting.

Hot Drinks for Winter

Nothing makes my mom smile more than when I bring her a mug of hot cocoa with marshmallows. I am going to say that is her favorite hot drink although she loves coffee, hot tea, and warm mulled cider. Hot cocoa takes her back to happy memories of her younger years. It does the same for me.

Soups and Pinto Beans

Pinto beans are on our menu at least once per week in the winter months. It is something my mom enjoys. I started making them in the instant pot with chicken broth, salt, onion powder, red pepper flakes, coarse salt, and pepper. I make a cake of cornbread and mom loves it. This is most likely more of a southern tradition but you should definitely try it.

My Recipe for Pinto Beans in the Instant Pot

Spray the instant pot with olive oil and saute a small onion.

1 lb pinto beans

5 cups broth (chicken or beef)- I use this much liquid because mom likes to add beans over her cornbread and she likes them to have a lot of liquid.

1 cup of water

Red pepper flakes- a couple of quick shakes

Coarse Sea Salt- 1 tsp

Garlic powder- 1tsp

Ground pepper

chili powder- 1 tsp

After you saute the onion add all ingredients to your instant pot. Select manual mode high pressure for 50 minutes. I let the pressure release naturally. Test your bean firmness.  If you want to cook longer I have put it back on manual for 5 to 10 minutes longer. From what I read if your beans are old it could take a little longer. We love these. The red pepper gives them a little kick.

I can not say enough about my instant pot. It can do so many things that save time and countertop space. Saute, Pressure Cooker and Slow Cooker

 

 

 

Warm and Cozy Indoors

I would do anything to make my mom feel more comfortable and secure. Staying indoors gets to her during the winter months.  Dementia is a terrible disease that causes insecurity and fear. Just holding her hand and keeping her warm on cold keeps her calm and happy.  If you are going through similar struggles I would love to hear from you.
